The conejillo de indias (guinea pig) is one of Peru’s edible native species. Eaten by the Incas and a source of protein in the diet of the mountain villages, it was always served at any major event. The tradition from the time of the empire was to squash it between two river stones then roast it on a grill slathered with ají peppers.
