In Lima the food is excellent. This is due to a combination of factors; years of fusion, starting with the secrets of the pre-Hispanic and colonial periods, and continuing with the arrival of Asian and European cuisine; however, the true secret is the freedom that exists to create.
Each dish is a journey, exploring flavors and rediscovering and transforming ingredients in the quest to achieve a unique result. And Lima’s desserts are worthy of special mention: “suspiro a la limeña”, “mazamorra morada”, “picarones” and, of course, the unmissable “turrón de Doña Pepa”.
And to accompany such fine food, nothing surpasses Peru’s national drink, pisco, in its many cocktail combinations, or our traditional corn drink, “chicha de maíz”.
