One of the most anticipated dates in northern Peru is the Algarrobina Day. Considered part of the national identity and symbol of Peruvian cocktails, this delicious flagship drink is celebrated every March 15 and the main tribute is held in the city of Piura, its place of origin.
During the days before the important date, numerous activities are carried out that seek to promote the consumption of this cocktail not only throughout Peru, but worldwide. Cities such as Catacaos, Piura, Chiclayo, among others in northern Peru, hold days in which visitors are taught the secrets to a perfect preparation, as well as contests to choose the largest carob fruit in the community and the best cocktail.
History of the drink
History tells that this drink was born in colonial times. During this time, the Spanish monks used to prepare a drink based on eggs, milk and wine. Over time, wine was replaced by pisco. Then, carob syrup (Algarrobina) would be added. Thus, given its great flavor and texture, the algarrobina cocktail gained popularity and began to be increasingly consumed.

Prepare it at home
The greatest quality of Algarrobina is its versatility: it can be tasted in a variety of presentations, both in cocktails and desserts, such as alfajores and cookies. Currently, some bartenders combine this liquor with cocoa cream or condensed milk to satisfy those who prefer sweet drinks.

Originally, the Algarrobina cocktail was prepared only with evaporated milk, one or two egg yolks, carob syrup (Algarrobina) and pisco.
Currently, you need these ingredients: 6 ounces of pure pisco, 3 ounces of carob syrup, 2 ounces of sugar syrup, 8 ounces of evaporated milk, 2 egg yolks, several ice cubes, and cinnamon powder. As a first step, pour into a blender the measurements of pisco, carob syrup and milk. After about 15 seconds, add the 2 egg yolks, the measurement of the sugar syrup and the ice cubes. Continue to liquefy until it is completely liquid.
Once ready, serve this delicacy in glasses decorated and sprinkled with ground cinnamon. Algarrobina cocktail is a drink that is drunk cold, so you can add more ice if you prefer. You only have to enjoy every sip on behalf of Peru.
