The Royal Decree of December 26, 1665 ordered the establishment of a Spanish parish in the city of Cajamarca. The temple, which would be elevated to the status of a cathedral in 1682, was built on the site of the former House of Justice. One of the most prominent examples of Peruvian Baroque, with a façade that harmoniously combines finely carved columns, cornices, and vaulted alcoves. Within its three naves the high altar and pulpit, both carved from wood and covered in gold leaf, are not to be missed.

Built in 1699 with stones taken from the "Casa de la Sierpe" (House of the Snake), which belonged to the "cacique" of Cajamarca Calixto Astopilco, and with stones from Santa Apolonia mountain. In 1952, catacombs were discovered beneath the high altar, where the remains of numerous members of the Franciscan order and the indigenous nobility were interred. Besides the church, there is a convent to visit, as well as the Museum of Religious Art and the Shrine of the "Virgen Dolorosa" (Sorrowful Virgin), who is the patron saint of the city. The figure of the virgin is located in the "Capilla del Sagrario" (Chapel of the Tabernacle) (1685), which is adjacent to the church of San Francisco and notable for its Baroque carvings, the stone carvings in high relief that depict scenes from Jesus' life, and the wood-carved choir stalls.

Cajamarca
Santa Apolonia mountain, formerly called "Rumi Tiana" (stone seat) in Quechua, is a strategic position from which to view the city and valley of Cajamarca. In the vicinity are ruins of pre-Hispanic buildings such as the "Throne of the Inca" made from a monolithic stone block protruding from the mountainside and which was meticulously carved to give it its present form. Aside from the staircases and gardens, there is a chapel dedicated to the Virgin of Fátima.
