Three Peruvian chefs presenting varied and delicious dishes, made the list of The World’s 50 Best Restaurants. Peru Brand ambassador Virgilio Martínez and his restaurant Central are ranked first in Latin America and fourth in the world, followed by Astrid y Gastón and Maido.
The awards ceremony for The World’s 50 Best Restaurants was hosted in London by the well-known magazine “Restaurant”, which has been awarding these prizes since the year 2002. Restaurant Central exceeded everyone’s expectations as it climbed 10 spots in the ranking, after being located at 14th on the list in 2014.
Its menu, created by chef Virgilio Martinez, is based on products yielded by a country as rich in biodiversity as is Peru. Restaurant magazine describes Martínez as a leader that organizes an interdisciplinary team; combining cuisine with nutrition, history, anthropology and science. They commented that both Virgilio and his co-workers regularly travel throughout Peru to discover local ingredients and recreate them in each of their dishes.
The restaurants Astrid y Gastón and Maido also made the ranking. The kitchen at Gastón Acurio is run by Diego Muñoz, who recreates ancient Peruvian heritage in each dish, making 14th on the list.
44th on the list is the restaurant Maido, by Mitsuharu Tsumura, a specialist in Nikkei food, which displays a cultural fusion that came out of the process of the Japanese migration to Peru and began more than 100 years ago.
