An emblematic example is the causa limeña, a delicate pressed potato pie filled with fresh vegetables. This preparation, in its vegan version, highlights not only the authentic flavor of the Peruvian potato, but also its ability to adapt to healthy and plant-based proposals.
Peruvian corn: freshness and versatility in each grain
Another essential ingredient is the Peruvian corn, a corn with a sweet flavor and consistent texture, which becomes the perfect complement to a healthy diet. Thanks to its versatility, this ingredient can be consumed in a wide variety of dishes, such as the traditional peruvian cheese solterito, a typical dish from the Arequipa region, in southern Peru, which consists of a fresh salad based on corn, cheese, olives and fresh vegetables.
