Ingredients:

• 2 oz. Pisco (Italia grape)

• 2 oz. pineapple infusion with spices

• 1 oz. pineapple syrup with spices

• 1/2 Tahiti lemon juice

• Diced pineapple

• Cherries

• Ice

Preparation:

1. Step-by-step for pineapple syrup: Chop the fruit into cubes and let it settle in gum syrup overnight. Remove the pineapple to have the syrup. Let the fruit soak in Pisco for later use in decoration.

2. Step-by-step for pineapple infusion: Boil 1 1/2 liters of water in a pot, add the peel of 1 whole pineapple, cloves, and cinnamon. Strain, serve, and let it cool.

3. Fill a wine glass with ice. Add your preferred Italia grape Pisco.

4. Incorporate the pineapple infusion, pineapple syrup, lemon juice, and a few pineapple cubes.

5. Gently stir and garnish with a cherry on a toothpick.
